How to prepare Trout with Wine Cream Sauce

In Seafood section we are going to prepare Trout with Wine Cream Sauce. Very lovable dish you will definitely want to have for your lunch or Dinner. Enjoy preparing and serving.

Ingredients:

  • 4 medium-sized trout
  • 4 rashers bacon
  • flour
  • salt, pepper
  • 60g (20z) butter
  • ¼ cup oil
  • ½ cup mayonnaise
  • 1 cup dry white wine
  • 2 teaspoons french mustard
  • ¾ cup sour cream
  • 90g (30z) slivered almonds
  • 6 shallots

How to Prepare:

  1. Wash and scale trout.
  2. Remove rind from bacon. cut bacon into small pieces.
  3. Put bacon into frying pan, cook gently until crisp; remove from pan.
  4. To fat in pan add slivered almonds, cook until golden brown; drain on absorbent paper.
  5. Chop shallots, combine with almonds and bacon.
  6. Coat trout lightly with flour seasoned with salt and pepper.
  7. Heat butter and oil in large frying pan, add trout, cook gently until golden brown and cooked through on both sides; keep warm.
  8. Drain fat from pan. leaving 2 tablespoons.
  9. Add wine and mustard, bring to boil, boil uncovered until liquid is reduced by half, remove pan from heat.
  10. Add mayonnaise and sour cream, stir until combined.
  11. Return pan to heat, stir until sauce boils, reduce heat, simmer for 1 minute.
  12. Season with salt and pepper.
  13. Put trout on serving plates. spoon sauce over, top with bacon mixture.
